Il vangelo della cucina italiana, spesso custode di qualche appunto culinario scritto su un foglietto volante con una grafia di un tempo perduto? E il quadernino delle vostre ricette, quello sul quale con tanta cura avete annotato dosi e preparazione di torte, paste brisée e arrosti? Inghiottiti o quasi dal turbine del blog di cucina, un fantasioso mondo virtuale dove uno smisurato esercito di cuochi/e o aspiranti tali si scambia consigli, suggerimenti, impressioni, ringraziamenti. Un'interminabile conversazione dove il segno grafico ha il suo compito importantissimo: faccine, cappelli da chef e forchettine, piccoli filmati e foto patinate fanno da condimento allo scambio di ricette e di opinioni culinarie.&lt;br /&gt;IL COMPUTER IN CUCINA Rimpianti? Qualcuno, ma il mondo gira così. Di certo non si cucina più con Pellegrino Artusi, o il Talismano della Felicità, o il Cucchiaio d'argento, o un numero della rivista della Cucina italiana, l'unica rivista ad avere la cucina in redazione , tutti testi sacri sui quali donne e uomini si sono misurati dal dopoguerra in poi. L'immagine di un libro di cucina aperto in un angolo del tavolo tra le uova, la farina e il burro è sparita. Oggi si porta il pc tra i fornelli. Semplifica la vita? Forse no, ma è divertente pensare di organizzare un pranzetto ascoltando e seguendo pedissequamente le video ricette. Non siete più soli. In cucina c'è con voi una compagna, una maestra che passo dopo passo vi illustra che cosa dovete fare. Il primo avvertimento è sempre uguale: seguitemi, è tutto facile.&lt;br /&gt;FANTASIA DEI BLOG È nei blog che la fantasia va a briglia sciolta. Che dire di Un Diavolo per Fornello , il blog di Cuochetta, mamma per amore e cuoca per passione? Oppure Il cuoco d'artificio , del cuoco Berso? O La banda dei Broccoli , diari quotidiani di precari urbani? Il viaggio nei siti di discussione di cucina, meglio delle cucine di tutto il mondo, è praticamente infinito perché ogni blog che si rispetti ha innumerevoli link che rimandano ad altre discussioni nella lingua che più desiderate. Nel gergo internettiano si chiamano forum. Ecco un esempio tratto da Giallo Zafferano uno dei siti di cucina più noti e consultati e tecnologicamente raffinati.&lt;br /&gt;LA CONVERSAZIONE Il sito dà istruzioni per una torta rustica di mele. C'è il filmato, ci sono le foto dei diversi passaggi e poi c'è un popolo che commenta in stile Facebook.&lt;br /&gt;Sarah ha scritto: sono bellissime le tue ricette...&lt;br /&gt;Jole F. ha scritto Sì è vero, la cottura ha richiesto più tempo e l'impasto mi sembrava un po' più liquido rispetto a quello mostrato nel video. A ogni modo, il sapore era delizioso e grazie Sonia, le tue ricette mi fanno fare sempre bella figura qui a New York!&lt;br /&gt;Serena ha scritto: Ciao Sonia, si possono emettere la scorza e il succo di limoni? Eventualmente con cosa posso sostituirli?&lt;br /&gt;Sonia-Gz ha scritto @Serena: puoi mettere della scorza di arancia!&lt;br /&gt;L'ISOLA IN INTERNET Nell'immenso panorama del blog di cucina la Sardegna non fa eccezione. Roberta Deiana, cagliaritana, è la frizzantissima autrice di “Invito a cena con aforisma” e di “Piccolo ricettario per cuochi perdigiorno”. Vive da tempo a Milano fa la stilista del cibo e cura l'ironico blog Confessioni di una foodstylist. Ove si narra di libri, di cucina bricconcella, di gran pappatori, di cuochi di baldacchino e altri piacevoli fatterelli. www.robertadeiana.com. &lt;br /&gt;&lt;span style="font-weight:bold;"&gt;La cucina è un eccellente pretesto. Ha invece una dimensione più casalinga (e materna) il blog &lt;a href="http://raffaelangela.blogspot.com/"&gt;http://raffaelangela.blogspot.com&lt;/a&gt;, anche lei cagliaritana. Nel suo sito bilingue dedica uno spazio curioso alle torte a tema con le quali festeggia i compleanni di figli e marito.&lt;/span&gt; &lt;br /&gt;Nicoletta invece è una sarda viaggiatrice di professione (fa l'assistente di volo per una compagnia giapponese), così incuriosita dai blog di cucina da volerne creare uno suo con l'originale impronta di chi vive tra più città. L'indirizzo www.my-breadandbutter.com, è rigorosamente bilingue e a scambiarsi le ricette sono persone che macinano miglia o chilometri in giro per il mondo.&lt;br /&gt;FOTO SPLENDIDE L'Orata spensierata. Per nuotare nel grande mare della cucina rimanda con le sue bellissime foto alla Sardegna e alle ricette con ingredienti tipici. Navigandoci non può che suscitare un pizzico di invidia. È possibile che ogni piatto presentato in un blog riesca alla perfezione? Diciamoci la verità: non vi sono mai scese le lacrime perché lo sformato fatto con tanta cura si è seduto , la torta è quasi bruciata in superficie ma è cruda nel cuore e la crema inglese che volevate offrire ai vostri ospiti è irrimediabilmente impazzita ? Internet offre tutto, anche consolazione in tema di blog culinari. Basta connettersi al sito Falsarius Chef, Cocina para impostores.... Si raggiungeva dalla home page di Tiscali e si chiamava &lt;a href="http://web.tiscali.it/raffaelangela/merenda/"&gt;&lt;span style="font-weight:bold;"&gt;&lt;span style="font-weight:bold;"&gt;Merenda&lt;/span&gt;&lt;/span&gt;&lt;/a&gt;, e una delle rubriche era, indovinate un pochino... &lt;a href="http://web.tiscali.it/raffaelangela/merenda/cuoco/index.html"&gt;&lt;span style="font-style:italic;"&gt;Mani in pasta&lt;/span&gt;&lt;/a&gt;! Conteneva ricette e proposte gastronomiche in miniatura. Marco (8 anni) durante le vacanze si è impegnato a ricavare le forme da mettere in forno. Abbiamo usato cioccolato (avanzato dalle uova di pasqua) e gli ingredienti tipici del pan di zenzero (cannella, zenzero, impasto base). Il risultato? Ingredients: a litre of Milk, 50 gr of Flour, 50 gr of Butter, 1 red of Egg, 1 pinch of Salt, 50 gr of grated Parmigiano.&lt;br /&gt;Put milk and butter in a saucepan and gently melt the butter (don't let it sizzle). Add flour and salt. Stir, over gentle heat, with a wooden spoon for 5 minutes until to let the flour cook. When it is amalgamated, add a little more milk and mix again. Add more milk, little by little, until you have a thickish creamy sauce. Add a egg yolk and stir and you have a bechamel (white sauce).&lt;br /&gt;Preheat oven to 325° F (160° C). Now take the pasta and put into a casserole, then add the bechamel and sprinkle Parmigiano cheese on top. Bake for 15 min.&lt;br /&gt;&lt;br /&gt;Recipe: Raffaelangela Pani. Per preparare il piatto (adatto come antipasto e per contorno) bisogna per prima cosa scottare i peperoni &lt;span style="font-style:italic;"&gt;(Capsicum annuum)&lt;/span&gt; in forno (180 gradi per 40 minuti) e poi spellarli, ancora caldi, avendo cura di eliminare i semi, il gambo e il torsolo. Lasciarli riposare per circa un'ora. Intanto fate bollire 100 cl d'acqua e 100 cl d'aceto in una casseruola (aggiungete un cucchiano di sale, un bicchiere di olio extravergine d'oliva e due cucchiaini di zucchero). Poi versate i peperoni nella casseruola e lasciateli cuocere per una decina di minuti. Lasciate raffreddare 20 minuti poi scolate e disponete i peperoni su un tagliere dove li dovete tagliare a fette sottili. Aggiungi prezzemolo, pomodoro secco e aglio, tutti e tre gli ingredienti triturati finemente, e aggiungi un cucchiaio di olio extravergine di oliva e un pizzico di sale. Disponi un fondo di patate tagliate a fette sottili, poi alterna strati di anguille e di patate. Una volta riempita la &lt;em&gt;pentola di pasta &lt;/em&gt;copri con un disco di pasta leggermente abbondante e intreccia il coperchio usando la parte sporgente. Metti in forno a 180 gradi per un'ora: la superficie deve dorare bene.
